Inspiring a new generation of
culinary entrepreneurs

Drawing on the experience of the New Nordic Cuisine which bestowed the Nordic food scene with numerous Michelin stars, Um Mami aims at inspiring a new generation of chefs and culinary entrepreneurs in Morocco.

What we do

  • Come learn with us

    At the Um Mami culinary centre in Marrakesh we offer 8 weeks intensive culinary training with care, kindness and top-level chefs. The everyday training is headed by Marie-Sophie Grønlund, a Michelin trained French-Danish young and promising chef with a positive vibe.

  • Curriculum

    The eight weeks intensive training programme covers basic culinary skills including planning, hygiene, and food safety followed by health and sustainability. Focus will also turn to New Nordic Cuisine, world cuisine and to Moroccan culinary history, produce, classic dishes and the potential for innovation. Towards the end of each course, the trainees will plan and execute an event putting their recently acquired skills into practice.
